Throw-and-Go Ranch Dressing
I’ve more than tripled the salad consumption in my house since homemaking our ranch – to the point where my oldest asks for it as a snack. It’s so easy I can’t even complain about it when I have to make more for them! Not to mention, I love putting it on so many things: shredded chicken, beans, even eggs!
It’s packed full of omega-3 fats and the beloved MCT oils (medium-chain triglyceride). MCT is the highly popularly fat due to it’s readily-available structure. It’s medium-chain design makes it so that it goes straight from the digestive tract to the liver, making it more likely to be used for energy INSTEAD of stored as fat. There are lots of companies that sell MCT as a weight-loss aid, or a keto enhancer.
Ready to make it? It’s easier than boiling water (but only if you’re like me and forget about said boiling water…and then it’s bubbling over and making a smoking mess all over the stove…)
I’ve adapted this recipe over the years, but it originally wasn’t mine. My sister in law shared It with me and we have tweaked it as we’ve gone!
The Goods
- 1 egg (ROOM TEMP!)
- 1C avocado oil (or neutral-flavored oil). Do NOT use olive oil. None of your kids will eat it, and you will have to power through to eat it out of pure principle. Not enjoyable.
- 1/2C full fat coconut milk, all shook up
- 1T apple cider vinegar
- 1T red wine vinegar
- 1t salt
- 1t pepper
- 1t granulated garlic
- 3/4t onion powder
Make it
- Dump it all in a wide-mouth glass jar
- Stick your immersion blender in the jar with it off.
- Start the immersion blender and leave it in the same position for a couple seconds while it starts to mix.
- As soon as you see the dressing start to look well-mixed, move your immersion blender up and down smoothly, incorporating everything and looking for that thick, frothy consistency.
- Enjoy! Store in the fridge with an air-tight lid for up to 2 weeks.
*A Quick Tip on Equipment*
Do yourself a favor and don’t buy an ooober cheap immersion blender. I bought a cheapy in June, and had to buy another one by Black Friday in November. This one (so far) has been fantastic, and has a cool, ability to increase intensity gradually, depending on how much you squeeze the handle. I love it! Here’s where to buy it:

2/4 of the first ingredients in commercial dressings like these are soybean oil and sugar. Soybean oil is hydrogenated and is thus, a trans-fat (they just don’t label it as such). It has been chemically modified to be tough and shelf-stable to save companies money. However, it is directly correlated with higher rates of heart disease, cancer, diabetes, and so much more. Any chance you get to decrease your intake of this, you are improving your chances of living a long healthy life.
