Simple Shepherd's Pie

I’ve posted a shepherd’s pie recipe before, but I wont lie. It was a touch complicated and time-intensive. This recipe is surprisingly simple…give it a try and feed your family with leftovers for your lunch the next day.

Here is a redo and totally doable on a busy school night! This is a perfectly sneaky way to get vegetables into your and your family’s diet. With the roasted meat and mashed potatoes, it almost needs that perfect pop of flavor found in the vegetables and spices to offset the richness of the meat and potatoes. 

Work this recipe into your meal plan when you have leftover shredded pork or beef and leftover mashed potatoes! It’s easy to work those into your food prep and creatively make a new meal with it. I didn’t include in it how to make mashed potatoes, or how to make shredded meat.  It’s paleo-friendly with three changes (included) in the recipe below.

Quick, Delicious, & Healthy

These aromatics are what makes all the difference in transforming your home cooking into restaurant-quality cooking. Starting with a base of carrots and onions, letting them soften first, and adding other sweet flavors like celery or tangy garlic makes a fantastic base for any recipe. Make sure that you use a rich fat to saute them and get that beautiful, golden color and flavor. Not to mention, they fight disease & improve your immune function!
