Tips for Perfectly Sticky Rice

We’ve been really trying to stick to staples lately. The economy sucks, food shortages are still here, and we are trying to save money to build a house. We are budgeting and adulting likely crazy! 
 
Enter rice, potatoes, and beans! 
 
We started incorporating more of these foods after listening to a few Dave Ramsey podcasts. He teaches that to keep food costs low, these foods should be the base of our diet. And, a plus, these choices are less inflammatory than wheat. 
 
Gluten flares up my psoriasis and causes gastrointestinal issues for my husband. So, my husband and I stick to it, but my kids still have their fair share of gluten. 
 
THE KEY is making these foods taste like restaurant-quality foods.
 
With a couple tips and tricks, you can easily have the most delicious and addictive rice!

Here's how to make Amazing Rice

  1. 2C Short grain or brown rice
  2.  4C Water
  3. 2T Coconut oil 
  4. 1T garlic powder
  5. 1T salt
  1. Place your rice in a colander and rinse it like crazy. Shake that thing around and run the water through it until it runs clear. This removes the starch on the rice…which makes it fluffy. Doesn’t make sense since we are aiming for sticky, not fluffy, right? Hold on. I’ll explain.
  2. Get your saucepan out and cover the bottom with a healthy dose of coconut oil. Let that heavenly elixir get shimmery and hot on medium-high heat. 
  3. Pour your rinsed rice into the hot oil with your spices and give it a stir. 
  4. Let those rice particles get toasty.
  5. When it starts to smell fragrant and toasty, add in your water and scrape the brown bits off the bottom of the pan.
  6. Bring to a boil.
  7. After it’s all bubbly, place a lid on it and drop the heat to low-medium for a nice simmer for about 15 minutes while those rice kernels soak up all that liquid, fatten up, and stick together.
  8. Serve warm and sticky!
By rinsing the grains, it separates them to have full expansion with the water. THEN, because of the coconut oil, it sticks together in the most beautiful marriage of deliciousness!

I sure hope this recipe and these tips inspire you to work some of these tasty staples into your diet! It is super helpful in keeping food costs low and can honestly taste so freaking good, everyone will fight over who gets the leftovers.

I always double this recipe as it stays good in the fridge for about 4-5 days. We use it in all sorts of lunches and dinners after that first night.
