Irresistible Sweet Potatoes
Fall Time is Upon Us!
These little cubes of delight are the perfect pop of cinnamon and fall love. It will literally change your life to make these delicious and irresistible sweet potatoes and it will get you giddy for fall. These babies are tossed in coconut oil, dusted in cinnamon, and caramelized to perfection.
They are perfect as (1) a snack, drizzled with some almond butter, as (2) a breakfast paired with over-easy eggs, or (3) thrown into a bowl of warm veggies and grilled chicken. As long as you like a touch of savory and sweet in the same plate, they go with literally anything!
I definitely include both white and sweet potatoes in my diet as they both have critical nutrients. Below I have listed some nutrients, benefits, and facts of sweet potatoes just to convince you a bit more as to why you should include them in your diet.
Here’s what you need:
- 2-3 medium or large sweet potatoes, cubed
- 2T coconut oil
- 1T cinnamon
- 1t salt
Here’s how you do it:
- Heat your pan on med-high heat & melt your coconut oil
- When the coconut oil is hot, pour your sweet potatoes into the pan & toss to coat.
- Sprinkle your seasonings evenly. Toss again.
- LEAVE the sweet potatoes for 2 min while they caramelized.
- Toss the taters & get that nice crust on a couple more sides.
- Once there is some good caramelization, reduce the heat to medium, splash a small amount of water into your pan, and cover to steam and cook through.
- After about 5-7 minutes of steaming, they should be tender with a crispy outside and will totally light up your taste buds!

My favorite fall food is butternut squash. I put cinnamon and a small amount of stevia in the cooked squash. Then I smash it like mashed potatoes with some butter. It’s so good.

Thank you so much friend 💕 And yay! Butternut squash is my runner up! And the ones from my garden are extra flavorful and tender. We love to cube it and cook it in rosemary and salt. But mashed sounds amazing!
