Freedom Toast

French toast has a different name in our house 😆 My husband is a veteran who loves all things AMERICA. So, French toast is definitely called FREEDOM toast! And you better not forget it! 🥰

Rugged mountain man really loves bread, but eats like I do, avoiding a number of inflammatory foods. That means we’ve cut out all gluten and many gluten free products (since they have a bunch of fake crap in them anyhow).
We love how we feel on our own Prescribing Nourishment “protocol”, but man alive, we have missed bread. I ventured out last weekend, found a recipe that actually worked, and made a bread that fit all of our needs and MAN alive it was good!

Cue Freedom Toast, Reed Country Style!

The Recipe

The key to thick, fluffy Freedom toast lies in 3 key steps.

  1. Use thick, fluffy bread. Brioche bread is traditionally the best, however, a grain-free bread with lots of aeration works great!
  2. Soak those medium-thick slices in the batter for quite a while!
  3. Make sure to include a fluffy thickener. We prefer full-fat plain Greek yogurt. You can trade it out for egg whites that you beat prior to adding any of your other batter ingredients, or heavy cream if you want to go traditional!

Turn a griddle on medium high heat. Get some rich, preferably grass-fed butter out to melt on the griddle when it’s frying time. (Those fats found in the butter are critical for coating your neurons in your brain and reducing brain fog!)

Beat 2 eggs

1/4C full fat greek yogurt

1/4C milk of choice (we are using our fresh goat milk right now, but almond is usually my go to!)

1tsp vanilla

1tsp cinnamon

and a spritz of salt in a shallow dish.

Let the slices of thick bread soak on each side while the butter melts and bubbles.

Lay those scrumptious Freedom toast pieces on the medium-hot griddle and let brown on one side completely. You should hear a sizzle, but just a gentle one. You want a crust, but not too quickly as the batter in the thick bread won’t be able to heat through and cook.
Flip to the other side and let it get golden brown before removing and sprinkling in fruit of choice and real maple syrup. 🍞🍓🧈🇺🇸
